Shades of Kale

The main types of kale are:

Curly  - green or red dark green to blue green frilly leaves
Russian -  flatter leaves with fringing. The leaves are tender however it is advised to remove as much of the stems as possible before cooking. The stems can be tough and woody.
• Tuscan (also known as black cabbage, Tuscan Cabbage, Cavolo Nero Kale, Lacinato and dinosaur Kale) - dark blue-green slightly wrinkled leaves .
